Cranberry Apple Curry

Ingredients

  • 2 small red oignons
  • 1 tablespoon curry powder
  • 2 small apples
  • 1 small handful dried cranberries
  • 1 can of diced tomatoes
  • 1 cup coconut milk
  • 1 tablespoon oat flour (or any other wheat free flour)
  • 1 pinch salt + pepper

Optional

  • 1 pinch chili flakes for extra kick
  • 1 parsley or coriander for garnish and some freshness

Instructions

  1. Cut onion + apple in slices. Add the onion slices to a pan over medium heat and add the curry powder. (Add a bit of water as well, otherwise the onions will stick to the pan - alternatively feel free to use oil) Stir until fragrant and add the apple slices.
  2. add the flour, cranberries and diced tomatoes (drain off the tomato juice before) and coconut milk. Let it simmer on low heat with a lid, occasionally stir. Spice with salt, pepper and chili. Enjoy with rice!
