Vegan + Wheat free Pancakes

Makes 1 big stack (as seen in picture;))

Prep time: 10 min., Cooking time: ca.15 min


3/4 cup oat milk (or other plant based milk)

1 cup oat flour (or whatever other wheat free flour)

2 tbsp apple cider vinegar

1 tsp baking powder

1/2 tsp baking soda

pinch himalayan salt

bit of vanilla powder or essence

1 flax egg

1 tbsp coconut sugar or Lucuma Powder (or other sweetener of choice)


1. Prepare your flax egg (1 tbsp flaxseed, 3 tbsp water) and leave to sit in the fridge for at least 5 min.

2. Mix all the ingredients (Ideally you mix dry and then dry into wet, but I’m always too lazy for this jazz, so I just mix everything immediately :P) And to make choice pancakes, just add some raw cacao powder to the mix;)

3. Heat up a pan on medium heat and get pancake-making 😉

4. Top with whatever you want. I topped mine with a salted tahini sauce. To make this just mix 2 tbsp tahini, pinch of himalayan salt, 1 tbsp mesquite powder and 1/4 cup oat milk. Enjoy!
