Prep time: 10 min., Cooking time: ca.15 min

Ingredients

Pancakes

3/4 cup oat milk (or other plant based milk)

1 cup oat flour (or whatever other wheat free flour)

2 tbsp apple cider vinegar

1 tsp baking powder

1/2 tsp baking soda

pinch himalayan salt

bit of vanilla powder or essence

1 flax egg

1 tbsp coconut sugar or Lucuma Powder (or other sweetener of choice)

Icing for beard

1/2 cup Coconut milk (left overnight in the fridge)

1/4 cup desiccated coconut

a few drops vanilla essence

pinch of himalayan salt

Topping for hat and mouth

strawberries

Topping for nose

Pomegranate seeds or choc sauce

Topping for Eyes

Choc sauce or blueberries

Instructions

1. Pancakes: Prepare your flax egg (1 tbsp flaxseed, 3 tbsp water) and leave to sit in the fridge for at least 5 min.

2. Mix all the ingredients (Ideally you mix dry and then dry into wet, but I’m always too lazy for this jazz, so I just mix everything immediately :P) And to make choice pancakes, just add some raw cacao powder to the mix;)

3. Heat up a pan on medium heat and get pancake-making 😉

4. Icing: Mix coconut milk, vanilla essence and desiccated coconut. Put into the freezer to harden a bit.

5. Choc sauce: Heat up some vegan chocolate in a pan until liquid.

6. Assemble the christmassy “Santa Clause” pancakes 🙂
