Malaysian Laksa Soup

Laksa is a very easy yet deliciously comforting malaysian soup. It always satisfies my spice needs 😉 Don’t be thrown off by the long list of ingredients, it’s essentially just “throwing all ingredients in a pot and cook”. Super simple!

Malaysian Laksa Soup

Makes 1 large serving

Prep time: 10 min, Cooking time: 30 min


1 tsp galangal

1 tbsp lemongrass

2 cloves garlic finely chopped

red chili (I use a whole chili or 1 tbsp dried chili powder)

1-2 stalk spring onion

bit of lemon zest

big splash rice mirin

1 tbsp ground coriander

1 tsp turmeric

1 tbsp tamarind paste

1 onion finely chopped

fresh ginger (1 knob)

1/2 – 1 cup coconut milk

splash tamari sauce as salt

black pepper

veggie broth


rice noodles

fresh coriander


bean sprouts

spring onions


1. In a large pot over medium heat toss onions, garlic, ginger, turmeric, tamarind paste, chili and black pepper and stir util fragrant, ca 3 min. To not burn anything you can either use a bit of water or coconut oil.

2. Then add the rest of ingredients, bring to a boil and then turn down and let it simmer for a few min.

3. In the meantime cook the noodles and then add them into the soup.

4. Top the laksa off with fresh coriander, spring onions, chili and bean sprouts. Enjoy!
