Rasa Kayi – Indian Curry

Makes  2 large servings

Prep time: 15 min. , Cooking time: roughly 30 min.


large handful tomatoes

1 small green chili

1 large onion

1 knob ginger

1 tsp fennel seeds

2 carrots (small), chopped

2 bay leaves

1 tsp cinnamon

1 tbsp coriander, dried

1 tsp cardamom

4-5 small potatoes, chopped

large handful broccoli

handful string beans

1/2 cup coconut milk

150 ml veggie broth

salt + pepper


1. In a blender/ food processor add tomatoes, ginger, bay leaves chili and fennel seeds. Blend away and put aside.

2. In a big pot on medium heat add onions and spices with a bit of coconut oil or water. Stir until fragrant.

3. Add potatoes + carrots and and veggie broth, cover with a lid and turn to a simmer.

4. When the potatoes + carrots are almost ready, add the rest ingredients.

5. If you used dried bay leaves, don’t forget to take them out before serving. Enjoy!
