Makes a couple of servings
Prep time: 10 min.
large handful dates (best soaked in warm water)
1/2 cup popped amaranth
1/4 cup shredded coconut
1/2 tsp cinnamon
1/2 tsp vanilla powder
splash lemon squeeze
1/4 cup pumpkin/sunflower seeds
1. Cut down the pre-soaked dates and throw them in a bowl, where you simply add all the other ingredients as well.
2. Mix together and store in the fridge.
