Vegan Indian Mixed Vegetable Curry

Makes 1-2 servings

Prep time: 15 min., Cooking time: 20-30 min.


1/2 can chopped tomatoes in juice

1/4 cup-1/2 cup coconut milk (can)

1 large chopped onion

2 garlic cloves (large)

bit of water

splash pure apple juice

1 tbsp tamari sauce (or just salt instead)

1/2 fresh chili or/and chili powder – depending on how spicy you want your dish

1 heaping tsp mustard seeds

1 tsp turmeric

1 heaping tsp dried coriander

1 heaping tsp fenugreek powder

1/2 tsp cinnamon

1 heaping tsp cumin seeds

whatever vegetables you have available ((Sweet) potato, carrots, peppers, etc)

fresh coriander


1. In a pan over medium heat toss the chopped onion + garlic and either you add water or a bit of coconut oil. Also add the cumin seeds, mustard seeds and turmeric. Stir until fragrant (3 min)

2. Add the tomato paste and stir a bit more. Then add water + 1/2 can chopped tomatoes in juice, coconut milk, the rest of the spices and all the vegetables.

3. Let it simmer on low heat until vegetables are tender.

4. Top with fresh coriander and chili. Enjoy!
