Every time I saw an amazing picture I told myself that I have to try it, but since I didn’t really know how and if it would work out I just kept putting it off until now. I finally gave it try and I have to say: I will never go back. This will be my “go to” method for pasta making now. If it’s possible the lazy way without compromising any flavors, I’ll be the first to do it. I was so skeptical of how this would turn out.   I tried Pad Thai for the first time around christmas last year and I tasted so good and I was asking myself: “Why the heck haven’t I tried that sooner?” A good question that is. Roasted Banana Chocolate GranolaMakes 1 big batchPrep time: 10 min., Baking time: 30-40 min.Ingredients2 cups jumbo oats1/2 cup chopped hazelnuts1 roasted banana (+ squeeze lemon juice)1 tbsp cashew butter 1 tbsp almond butterpinch salt1 heaping tbsp raw cacao powder1 tsp mesquite powdersmall handful dates (4-5) Instructions1. Pre-heat oven to 150 degrees. Slice banana in half, drizzle with lemon juice and pop it into the oven for about 10 minutes.2. Add the dates with a bit of water to a blender and mix to a date paste.3. In a big mixing bowl add all the ingredients including the roasted banana (just mash it in), mix everything together and then spread out on a baking tray, pop into the oven for 30-40 min. Keep checking on it, so it doesn’t get burnt.
