Almond Bircher Muesli with Toasted Coconut
Makes 1 large serving or 2 small ones 😉
Prep time: 5 min.
1 heaping tbsp chia seeds
1/2 cup oats
1 heaping tbsp almond shavings + a few crushed almonds
1 tbsp desiccated coconut
1/2 tsp cinnamon
1/2 tsp vanilla powder
1/4 cup pure apple juice
1 tbsp coconut milk
1/4 cup oat milk (or other plant based milk)
1. Mix everything together and let it sit for at least 15 minutes, so the mix can thicken up. (You can easily leave it overnight of course)
2. As topping you can use more almond butter, fresh banana slices, raw cacao nibs, and of course more toasted coconut. The options are endless 😉 Enjoy!
