Coconut Lemongrass Soup

Makes 1 serving

Prep time: 10 min. Cooking time: 15 min


1 knob ginger

1 chunk frozen shredded lemongrass (it’s the best!!)

1/2 cup coconut milk

1 tbsp rice mirin

1 tbsp tamari sauce

shirataki noodles (or whatever)

veggies (I use onion, shredded carrots, pepper, edamame, cabbage) But really use whatever you have in the fridge

some fresh coriander + spring onions

sesame seeds 


1. Bring some water to a boil, add the coconut milk, rice mirin, lemongrass and tamarin sauce along with your veggies (or if you prefer them raw, add them at the end).

2. Then pour it into a bowl, add the shirataki noodles (They don’t need any cooking) and top off with fresh coriander, spring onions and sesame seeds. Enjoy hot!
