This is one of those dishes you can always make when you’ve run out of absolutely almost all fresh ingredients and you have no idea what to make for dinner. It’s so simple, easy and quick yet tastes absolutely delicious.
Cranberry Apple Curry
Prep time: 10 min. , Cooking time: 15 – 20 min.
Serves about 2
1 big or 2 small red onions
1 heaping tbsp curry powder
1 large or 2 small apples
small handful cranberries
1 can diced tomatoes
1 cup coconut milk
1 tbsp oat flour (or any other wheat free flour)
salt + pepper
optional: chili for extra spice kick
optional: parsley or coriander for garnish and some freshness
1. Cut onion + apple in slices. Add the onion slices to a pan over medium heat and add the curry powder. (Add a bit of water as well, otherwise the onions will stick to the pan – alternatively feel free to use oil) Stir until fragrant and add the apple slices.
2. Then add the flour, cranberries and diced tomatoes (drain off the tomato juice before) and coconut milk. Let it simmer on low heat with a lid, occasionally stir. Spice with salt, pepper and chili. Enjoy with rice!
