Easy Fig Bircher with Coconut and Goji

Makes 1 serving

Prep time: 10 min.

(leave overnight or at least 10-15 minutes)

Ingredients

3 fresh figs

2 tbsp juice of lemon

a few goji berries

1/2 tsp vanilla powder

few drops vanilla extract

3/4 cup oats

few raisins

1 tsp chia seeds

1 heaping tbsp coconut yoghurt

1 tbsp desiccated coconut 

1/2 cup oat milk ( or the plant milk)

1/2 ripe banana

 

Instructions

1. Scoop out the flesh of 2 figs, add it to the blender along with 1 tbsp lemon juice, bit of vanilla powder and the chia seeds, blend away and set aside.


2. In a mixing bowl throw and mash together all the other ingredients, mix in a bit of the blended fix and use the rest for topping. For creamiest results leave covered overnight in the fridge, or at least for 10-15 min. Also, if you want and ready to eat, top with fig chunks, more gojis and coconut shavings.
