Easy + Quick Strawberry Salad
Prep time: 15 min. , Cooking time: 15 min.
1 cup quinoa
1. Toast a few almonds on low heat for 3-5 min.
2. In another pot heat up 1/4 cup of balsamic vingear on medium heat and let it reduce to a sticky glaze (about 10 min).
3. In the meantime wash your favorite leafy greens (I used rocket and corn salad) and squeeze fresh lemon juice over. Add the strawberries and top with the toasted almonds. Lastly drizzle the balsamic glaze over. Enjoy and indulge!
