Easy Vegan Moroccan Tagine without a Tagine

Serves 2-3

Prep time: 20 min., Cooking time: 45 min. – 1 hour


Tagine paste

1 onion

1 garlic clove

1 knob fresh ginger

juice of 1 lime

juice of 1/2 lemon

1 tsp cumin

1 tsp paprika

1 tsp turmeric

1 date

1 tsp chili powder

handful fresh coriander


1 large carrot

1 leek

2 parsnips

1 onion

1 large potato

5 dried prunes

few mint leaves

handful pumpkin chunks


1. In a blender throw together all the tagging paste ingredients and blend away.

2. In a large pot heat up all the vegetables on medium heat and roast for a few minutes with a bit of water or coconut oil. Then fill up with water until all vegetables are covered, add the tagging paste and turn down to simmer. Cover and leave to simmer for about an hour – 45 min. but keep checking on it.
