India .. where do I begin?Maybe by the fact that I almost forgot my laptop at the airport.    I used to live in Montréal and one of the perks living there was poutine. Especially the poutine from La Banquise. My favorite was the “La Taquise” which has additionally to gravy also fresh tomatoes, sour cream and guacamole. Needless to say that this was before I went plant based.  Vegan Chocolate Blueberry Cookies (gluten free, sugar free)Makes 5 large cookiesPrep time: 10 min., Baking time: 30-35 min.Ingredients1 tbsp flax egg (mix 1 Tbsp flax seed + 3 Tbsp water)1/2 cup almond meal1/2 cup quinoa flour (feel free to use any other gf flour)2 tbsp arrowroot starch5 dates1 tbsp baking powder1 heaping tbsp raw cacao poderhandful blueberriesa few raw vegan choc chunkspinch of himalayan saltfew drops vanilla essence1 tbsp almond butterInstructions1.
